This easy, homemade, baked mac and cheese recipe adds broccoli to the mix, a great way to sneak veggies in a kid's favorite dish! It's also lightened up, so less calories than traditional mac and cheese.

This easy, homemade, baked mac and cheese recipe adds broccoli to the mix, a great way to sneak veggies in a kid's favorite dish! It's also lightened up, so less calories than traditional mac and cheese.

INGREDIENTS

  • 12 oz high fiber elbows like Ronzoni Smart Taste
  • 1 1/2 tbsp butter
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 2 cups skim milk
  • 1 cup fat free chicken broth, vegetarians use vegetable broth
  • 8 oz 2 cups reduced-fat sharp cheddar (Cabot 50%)
  • salt and fresh pepper to taste
  • 12 oz fresh broccoli florets, I used pre-cut bag
  • 2 tbsp grated parmesan
  • 1/4 cup seasoned bread crumbs
  • cooking spray

INSTRUCTIONS

  • Cook pasta and broccoli together in a large pot of salted water, according to package directions for al dente (or slightly under cook 2 minutes). Spray a baking dish with cooking spray
  • Preheat oven to 375°F.
  • In a large, heavy skillet, melt butter. Add onion and cook over low heat about 2 minutes, add flour and cook another minute, or until the flour is golden and well combined. Add milk and chicken broth and whisk, raising heat to medium-high until it comes to a boil; cook about 5 minutes or until the sauce becomes smooth and thick. Season with salt and pepper
  • Once the sauce is thick, remove from heat, add cheese and mix well until cheese is melted. Adjust salt and pepper to taste, add cooked macaroni and broccoli and mix well. Pour into prepared baking dish. Top with grated cheese and breadcrumbs. Spray a little more cooking spray on top
  • Bake for 15-20 minutes, then broil for a few minutes to get the breadcrumbs golden.

FRESH CAJUN PASTA by six sisters

Serves: 4
Prep Time: 15 Minutes
Cook Time: 15 Minutes
INGREDIENTS:
  • 1 pound vermicelli pasta
  • 2 Tablespoons olive oil
  • 1 teaspoon minced garlic
  • 10 roma tomatoes (chopped)
  • salt, to taste
  • 1 Tablespoon chopped parsley
  • 1 Tablespoon Cajun seasoning
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
DIRECTIONS:
  1. Bring a large pot of water to a boil.
  2. Add pasta and boil for 8-10 minutes.
  3. While the pasta is boiling, heat olive oil and garlic in a large sauce pan. Once it has started to brown, add the chopped tomatoes.
  4. Simmer for about 10 minutes, and then mash your tomatoes with a fork.
  5. Add salt, parsley, and Cajun seasoning and simmer for about 5 more minutes.
  6. Remove from heat and serve over pasta.
  7. Top with Parmesan and Mozzarella cheese.

Pasta w/chicken, broccoli, & sun-dried tomatoes - america's test kitchen

4 Tbsp unsalted butter
1 # boneless, skinless chicken breasts, trimmed of fat and cut crosswise into 1/4 inch slices
1 small onion, chopped fine (about 2/3 cup)
table salt
6 medium cloves garlic, minced (about 2 tbsp)
1/4 tsp red pepper flakes
2 tsp chopped fresh thyme
2 tsp flour
1 cup dry white wine
2 cups chicken broth
1 bunch broccoli (about 1.5#) florets (about 6 cups)
1/2 # penne pasta, ziti, cavatappi or campanelle
2 oz grated Asiago cheese (1 cup), plus extra for serving (I just use fresh parmesan cuz I have it from costco)
1 jar oil-packed sun-dried tomatoes (7-8.5 oz), rinsed, patted dry and cut into 1/4 inch strips
1 Tbsp minced fresh parsley

1.  Bring 4 qt water to rolling boil, covered, in stockpot

2. Meanwhile, heat 1 tbsp butter in 12 inch nonstick skillet over high heat until just beginning to brown, about 1 minute.  Add chicken in single layer; cook for 1 minute without stirring, then stir chicken and continue to cook until most, but no all, of pink color has disappeared and chicken is lightly browned around the edges, about 2 minutes longer.  Transfer chicken to clean bowl; set aside.

3. Return skillet to high heat and add 1 tbsp butter; add onion and 1/4 tsp salt and cook, stirring occasionally, until browned about edges, 2-3 minutes.  Stir in garlic, red pepper flakes, thyme, and flour; cook, stirring constantly, until fragrant, about 30 seconds.  Add wine and chicken broth; bring to simmer, then reduce heat to medium and continue to simmer, stirring occasionally, until sauce has thickened slightly and reduced to 1 1/4 cups, about 15 minutes.

4.  While sauce simmers, add 1 tbsp salt and broccoli to boiling water; cook until broccoli is tender but still crisp at center, about 2 minutes.  Using slotted spoon, transfer broccoli to large paper towel-lined plate.  Return water to boil; stir in pasta and cook until al dente. Drain, reserving 1/2 cup pasta cooking water; return pasta to pot.

5.  Stir remaining 2 tbsp butter, asiago, sun-dried tomatoes, parsley, and chicken into sauce in skillet; cook u ntil chicken is hot and cooked through, about 1 minute.  Off heat, season to taste with pepper.  Pour chicken/sauce mixture over pasta and add broccoli; toss gently to combine, adding pasta cooking water as needed to adjust sauce consistency.  Serve immediately, passing additional Asiago and the lemon wedges (if using) separately.

Granny's Macaroni Salad

Bring water to boil

Add 1 tsp oil and salt.  Add 12 oz macaroni noodles. Cook no more than 10 minutes (boiling) - taste it, don't want too done.

Put frozen peas in strainer.  Pour macaroni & water over peas.

Add large jar of diced pimento.  Add cut up sweet pickles.

Mix 1 Tbsp mustard and 1 up REAL mayonnaise & 1/4 cup pickle juice

If still too dry add more mayonnaise

Season with Lawry's seasoning salt.  pepper.  Add more salt if needed.

Pasta with Chicken, Broccoli, and Sun-dried Tomatoes


WHY THIS RECIPE WORKS
Lightly browning chicken breast strips in butter started building flavor into our pasta with chicken recipe. We kept the chicken tender and added more flavor by letting the strips finish cooking in the sauce, and we kept the broccoli fresh and crisp by blanching it in the boiling pasta water and then putting it aside until the dish was assembled. But our real breakthrough in developing this pasta and chicken recipe was to eliminate the cream typically used in this dish and to create instead a broth-based sauce, which we rounded out with a few tablespoons of butter, a handful of Asiago cheese, and some sun-dried tomatoes.





INGREDIENTS
4 tablespoons unsalted butter
1 pound boneless, skinless chicken breasts, trimmed of fat and cut crosswise into 1/4-inch slices
1 small onion, chopped fine (about 2/3 cup)
Table salt
6 medium cloves garlic, minced or pressed through garlic press (about 2 tablespoons)
¼ teaspoon red pepper flakes
2 teaspoons chopped fresh thyme leaves
2 teaspoons all-purpose flour
1 cup dry white wine
2 cups low-sodium chicken broth
1 bunch broccoli (about 1 1/2 pounds), florets trimmed into 1-inch pieces (about 6 cups), stems discarded
½ pound penne pasta, ziti, cavatappi, or campanelle (I used penne)
2 ounces grated Asiago cheese (1 cup), plus extra for serving (I used parmesan cheese)
1 jar oil-packed sun-dried tomatoes (7 to 8 1/2 ounces), rinsed, patted dry, and cut into 1/4-inch strips (about 1 cup)
1 tablespoon minced fresh parsley leaves
Ground black pepper

INSTRUCTIONS
SERVES 4
HEADNOTE
Be sure to use low-sodium chicken broth in this recipe; regular chicken broth will make the dish extremely salty. The broccoli is blanched in the same water that is later used to cook the pasta. Remove the broccoli when it is tender at the edges but still crisp at the core-it will continue to cook with residual heat. If you can't find Asiago cheese, Parmesan is an acceptable alternative.

To quickly remove florets, place broccoli upside down on cutting board and trim with knife.

Tuscan Pasta With Tomato-Basil Cream from myrecipes.com

Crockpot Tuscan Pasta With Tomato-Basil Cream Sauce. oh yes.:




Ingredients

1 (20-oz.) package refrigerated four-cheese ravioli*
1 (16-oz.) jar sun-dried tomato Alfredo sauce
2 tablespoons white wine
2 medium-size fresh tomatoes, chopped**
1/8 cup italian seasoning * I use (or 1/2 cup basil *recipe calls for)
1/3 cup grated Parmesan cheese
Garnish: fresh basil strips



Preparation

1. Prepare pasta according to package directions.
2. Meanwhile, pour Alfredo sauce into a medium saucepan. Pour wine into sauce jar; cover tightly, and shake well. Stir wine mixture into saucepan. Stir in chopped tomatoes and 1/2 cup chopped basil, and cook over medium-low heat 5 minutes or until thoroughly heated. Toss with pasta, and top evenly with 1/3 cup grated Parmesan cheese. Garnish, if desired.
*1 (13-oz.) package three-cheese tortellini may be substituted.
**1 (14.5-oz.) can petite diced tomatoes, fully drained, may be substituted.

Baked Ziti

Cook ziti or penne pasta to about 90% done (about 2 pounds). Maybe cook about 8 minutes.

Combine and stir the following:

Tomato sauce 30oz + 8 oz
Tomato paste  1 can
15oz diced tomatoes with italian herbs
Italian seasonings to liking, we use: 3 tsp italian seasoning, 1 tsp garlic salt
Ricotta cheese 32oz
Cottage cheese 24oz
Parmesan cheese 1 cup
mozzarella cheese 1 handful

Take enough of the noodles and enough of the sauce mixture in a bowl for one casserole at a time.  *Recipe usually makes enough for 3-4 casseroles and sometimes a gallon sized bag of sauce.

Add cooked ground beef or chopped up pepperoni.  Top with mozzarella cheese and more italian seasoning for color and flavor.  Cover with foil.  Bake 350 for 45 minutes.

Lasagna Rolls

1/2 c part-skim ricotta cheese
1 egg, beaten
1 oz shredded mozzarella cheese
2 Tbsp grated parmesan cheese, divided
1/8 tsp oregano leaves
1/8 tsp basil leaves
Dash garlic powder
4 curly edged lasagna noodles (12"x3" pieces), cooked according to directions on package
1/2 cup tomato sauce

Garnish
Italian (flat leaf) parsley leaves

Preheat oven to 350. Spray 2 individual casseroles with non-stick cooking spray.

In small bowl combine ricotta cheese, egg, mozzarella cheese, 1 Tbsp parmesan cheese, and the seasonings. Mix well.

Place cooked lasagna on a damp towel and spoon 1/4 of the cheese mixture lengthwise along the center of each noodle; starting from narrow end, carefully roll each noodle to enclose filling.

Place 2 rolls in each sprayed casserole with 3/4 tsp parmesan cheese and bake until thoroughly heated, 35-40 minutes. Serve garnished with parsley.

Lasagna

1 box lasagna noodles
2 lbs cottage cheese
2 lbs orange cheese
2 lbs hamburger
48 oz tomato juice
1 onion diced or 3 Tbsp minced dried onion
1 1/2 Tbsp Oregano
1/2 Tbsp Italian Seasoning

Preheat oven to 450
Brown hamburger and drain fat.
Put tomato juice in big pot, add onion, oregano, and browned hamburger.
In large bowl mix orange cheese and cottage cheese together.

It's best to use a disposable aluminum lasagna pan from the store but a 9x13 cake pan can be used if you don't have one. You may make a mess in the oven using a pan with low sides. Start out by putting down a layer of sauce, then put down a layer of dry noodles, then put down a layer of cheese mixture. Repeat with sauce, noodles, and cheese until all the ingredients are used.

Cover pan with aluminum foil and bake for about 1 hour.
