Italian Pork Rost from The Family Freezer

Italian Pork Roast

Serve over spagheti with a side of broccoli or green beans. Serve over gluten-free spaghetti or zucchini "noodles" to make gluten free.  Omit Parmesan Cheese to make dairy free.

Servings: 6

Ingredients
1                                               2 lb boneless pork roast
1 can (28oz)                             diced tomatoes, undrained
1/2 cup                                     grated Parmesan cheese
2 tablespoons                           olive oil
4 cloves                                    minced garlic
1 tablespoon                             parsley
1 tsp                                          basil
1 tsp                                          oregano
1/2 tsp                                       pepper

To Freeze and Cook Later
1.  Label your freezer bag with the name of recipe, cooking instructions, and "use-by" date.
2.  Add all ingredients to your freezer bag
3.  Remove as much air as possible, seal and freeze

To Cook
1.  Thaw freezer bag overnight in fridge or in water in the morning
2.  Pour contents of freezer bag into your crockpot
3.  Cook on "low" setting for 6 hours in 6 qt crockpot or 8-10 hours in 4 qt crockpot  (we have 6 qt and do 6 hours)
